龙须面是由龙岩大悦，即明朝皇帝的御用厨师所创造的。至今已有
300多年的历史。在某年农历的第二个月或“立春”期间，厨师为
皇帝线上又白又细的面条，看起来就像一条龙的胡须，象征皇上天
子之命。因此，中国北方在龙抬头节庆期间有吃面条的习俗，以庆
祝到人间降春雨，也象征吉祥、好运。如今龙须面已是北京到山东
的中国全民面条。

Dragon Beard Noodles are believed to have been created 300
years ago by Long Yan Da Yue, the head chef of the emperor
of Ming dynasty. During the second lunar month or “Lichun”,
the chef serve the emperor a kind of thin, white noodles
that looks like the whiskers of a dragon, a meal befitting an
emperor. As such, the northern China began to eat noodles
during the “Longtaitou” festival which celebrates dragons and
its auspicious luck in bringing the Spring rain. Now it is a national
noodle widely consumed by the Chinese people from Beijing
to Shandong.
